7 cups of cubed watermelon, chilled & well-drained
4 oz crumbled feta cheese
1 cup loosely packed fresh mint leaves coarsely chopped
1 TBL rice Vinegar
Kosher or sea salt
Freshly ground pepper

Directions:
Directions:
Gently stir together watermelon, feta cheese, and mint
Sprinkle with rice vinegar and gently stir again.
Season with salt & pepper. Serve immediately.

Personal Notes:
Best served right away. The vinegar starts to break down the watermelon if made too far in advance. If you are bringing it to a dinner, combine all the ingredients except the rice vinegar ahead of tie and then stir in the vinegar right before serving.
