Cooking spray
1 tbsp vegetable oil
1 lb skinless, boneless chicken, chopped
1 small onion, chopped
3 cloves garlic
1 (14.5 oz) can diced tomatoes
1 (14.5 oz) can chicken broth
1 large can (26-32 oz) green enchilada sauce (more or less to taste)
½ tsp oregano
2 (16 oz) cans white beans...any type (great northern, cannellini or other), drained
3 tbsp lime juice
¼ tsp pepper
Optional - can of diced green chilis
Shredded cheddar cheese for topping
Cooked rice

Coat pan with cooking spray. Add oil. Heat over medium-high heat until hot. Add onion and garlic. Sauté 2-3 minutes. Add chicken. Sauté 3 minutes or until chicken is no longer pink.
In large pot place all ingredients (except lime juice and cheese). Bring to a boil; reduce heat and simmer 25 minutes or until thoroughly heated. Stir in lime juice and pepper. Spoon into bowls over rice, and sprinkle with cheese. This does well in a slow-cooker too!
