5 ears of corn, shucked
1 small red onion, diced
3 tablespoonss cider vinegar
3 tablespoonss good quality olive oil
1⁄2 teaspoons salt
1⁄2 teaspoons freshly-ground black pepper
25 grams julienned fresh basil leaves

Directions:
Directions:
In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is gone. Drain and immerse the corn in ice water to stop cooking and to set the color.
Once the corn is cool, cut the kernels off the cob, cutting close to the cob.
In a large bowl, toss the kernels with the red onions, cider vinegar, olive oil, salt, and black pepper.
Immediately before serving, toss in the fresh basil leaves. Taste for seasoning and serve the salad cold or at room temperature.
