1-15 oz can corn
1-15 oz can black beans
1-15 oz can red beans
1-15 oz can pinto beans
½ c. diced green pepper
½ c. diced celery
½ medium white onion, diced
1-2 jalapeño peppers, without the seeds, diced

Dressing
3 oz apple cider vinegar
2 oz canola oil
½ c. sugar
½ tsp. salt
¼ tsp. black pepper
½ T. water

Directions:

  • Drain the can of corn. Drain and rinse well all the beans. Put all in a large bowl and add the peppers, celery, onion and jalepenos

  • In a small saucepan add all the ingredients for the dressing and warm on the stove stirring until the sugar is completely dissolved. Remove from the stove and let it cool

  • Pour the dressing over the bean and vegetable mixture, stir and refrigerate

  • Serve with tortilla chips. Scoops are perfect!

I often use red, yellow or orange peppers instead of green. If you can find a can of white corn, it is best as the kernels are smaller. I have seen people put this mixture on top of a tossed salad or a baked potato. The possibilities are endless. This recipe is similar to others called Cowboy Caviar. Enjoy!
