10 Lasagna Noodles
½ c. chopped ripe Olives
2 10 oz. pkgs. frozen chopped Spinach
1½ tsp. Oregano
½ c. chopped Onion
2 c. cream Cottage Cheese
1 tbsp. Oil
1 lb. sliced Monterey Jack Cheese
1 c. grated Carrots
½ c. grated Parmesan
2 c. sliced fresh Mushrooms
1 15 oz. can Tomato Sauce
1 6 oz. can Tomato Paste

Directions:
Directions:
Cook noodles 8 to 10 minutes. Cook spinach. Sautee onion until soft.
Add carrots and mushroom; cook until crisp - tender. Stir in tomato sauce, paste, olives and oregano.
Grease 13 x 9 x 2 casserole. Layer ½ noodles, cottage cheese, spinach sauce and ⅓ of cheese slices.
Repeat; add last ⅓ cheese slices on top. Sprinkle with Parmesan.
Bake 30 minutes at 375º.
