1 cup unsalted butter
1 cup brown sugar
½ cup granulated sugar
2 large eggs
2 tsps vanilla extract
1½ cup cake flour
1½ cup all-purpose flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 cup white chocolate chips
1 cup crushed oroes (about 10 cookies)

1. Preheat the oven to 375ºF. Line baking sheets with parchment paper or silicone mats.
2. In a mixing bowl using a handheld or stand mixer with a paddle attchment, cream together cold butter, brown sugar, and granulated.
3. Add the eggs, one at a time. Scrape the bowl in between. Then add the vanilla extract, and beat until pale and creamy.
4. Dry ingredients: In a seperate bowl, sift together all-purpose flour, cake flour, baking powder, baking soda, and salt.
5. Add dry ingredients into the butter-egg mixture. Mix until just combined.
6. Stir the crushed oreos and white chocolate chips into the cookie dough, until evenly distributed.
7. Chill the cookie dough in the refrigerator for 15-30 minutes. If making ahead, you can chill the cookie dough for up to 72 hours.
8. Assembly: Take a big spoonful of chilled dough, flatten it out, and make a dent in the middle. Top with one oreo. Then take another big spoonful of dough and use your hands to seal the dough around the oreo until it is completely covered. Shape the dough into tall round balls.
9. Repeat until all the dough is used (each cookie should weigh about 3.5 ounces).
10. Place 6 cookies on one baking sheet, at least 2 inches between the cookies.
11. Bake for 12-14 minutes or until the edges are golden brown. Let cool for 15 minutes on the baking sheet before transferring to the cooling rack.
