2 medium potatoes, peeled and cubed
1 small onion, chopped
4 boneless skinless chicken breasts
1 cup coconut milk
4 teaspoons curry powder
1 teaspoon minced garlic
1 teaspoon onion
1 chicken bouillon cube
3 tbsp sugar
salt & pepper to taste
2 cups cooked, hot rice
Raisins
Flaked coconut
Chopped, unsalted peanuts

Directions:

Place potatoes and onion in your crock pot.

In a large skillet coated with cooking spray, brown chicken on both sides and then place it in the crock pot too.

In a small bowl, combine coconut milk, curry, garlic, onion, bouillon cube, sugar, salt & pepper and pour the mix over the chicken.

Cover and cook on low for 4-5 hours or until the chicken is tender.

Serve your dish on a bed of hot rice and sprinkle the raisins, coconut flakes and peanuts on top.
