Ingredients-

1 beef flank steak (1-1/2 pounds)
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained
1 jalapeno pepper, seeded and chopped
2 teaspoons minced garlic
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1 medium onion, sliced
1 medium green pepper, sliced
1 medium sweet red pepper, sliced
minced fresh cilantro
lime juice
fresh queso fresco cheese
12 flour tortillas (6 inches), warmed

Directions-

Thinly slice steak across the grain into strips and place in a crock pot.
Add the tomatoes, jalapeno, garlic, coriander, cumin, chili powder and salt.
Cook, covered, on low for 7 hours.
Add the onion, peppers, cilantro and lime juice.
Cook, covered, until meat is tender, 1-2 hours.
Fold bottom of tortilla over filling and roll up.

Serve with toppings......sour cream, salsa, fresh cilantro leaves and lime wedges. Whatever makes your Mexican food loving heart happy.

This is one of my most favorite recipes EVER!
Especially when you add fresh queso fresco cheese and cilantro to the tops of your fajita roll-up right before you serve.

I ALWAYS double this recipe. 1 1/2 pounds of flank steak Never seems to be enough when I want more and there's nothing left!!
