3 lbs of pork riblets
1 jar of chile rojo salsa
1 medium onion sliced
4 tsp of minced garlic
7 oz of canned tomato sauce
2 tsp of salt
2 tsp of ground black pepper
2 bay leaves

Directions:
Directions:
Begin by cutting the riblets into pieces.
Add oil to the bottom of a large skillet or dutch oven over medium heat.
Place the riblets into the skillet.
Season with salt and pepper and mix well.
Now add in the garlic and onions.
Cook until the riblets turn a golden brown.
Add the jar of chile rojo, 1/2 a cup of water, bay leaves and the tomato sauce. Stir the liquid into the meat.
Bring the mixture to a boil. Then lower heat and cover the skillet.
Cook for 45 to 60 minutes.
When the riblets are tender, remove the bay leaves.
Now enjoy.
