2 tablespoons of apple cider vinegar
1/4 cup of finely grated Parmesan
12 basil leaves roughly torn
6 tablespoons of olive oil
Salt and pepper

Directions:
Directions:
Place the apple cider vinegar, grated Parmesan, basil leaves, and olive oil in a blender or food processor and season with salt and pepper.

Blitz the mixture until it is smooth and beautifully green.

The dressing is best used immediately, but it will keep in the fridge for 2 to 3 days, although it may lose some of its vibrant green color in that time.

The olive oil may solidify in the refrigerator, just shake and bring it to room temperature before adding to your salad.

This recipe is from the Glucose Goddess cookbook. It is our favorite in the summertime when we have basil growing in the garden. We always top it with extra Parmesan.
