1/2 cup unsalted butter, softened
1 cup dark brown sugar, packed
1/2 cup white sugar
1 tsp. pure vanilla extract
1 large egg
2 egg yolks
1-1/2 cups all-purpose flour
1 cup cake flour
1-1/4 tsp. sea salt
1/4 tsp. baking soda
1/2 tsp. baking powder
2 Tbsp. cornstarch
1-3/4 cup chocolate chips
Flaky sea salt, for topping (optional)

Using a stand miser, whip butter with both sugars on high speed for 5 minutes or until the mixture becomes light and airy. Add vanilla extract, eff and egg yolks. Mis on medium-low speed until fully incorporated.

In separate bowl, combine the all-purpose flour, cake flour, salt, baking soda, baking powder and cornstarch. Gradually add the flour mixture and mix on low speed for approximately 1 minute or until just combined. Gently fold in chocolate chips.

Use largest melon baller scoop and scoop out cookies on prepared cookie sheet with parchment paper and freeze, covered, for about 1 hour. Remove from freezer and sprinkle with sea salt (optional).

Bake at 420 degrees for 16 minutes (leave for exactly 16 minutes to be set but yet gooey) or until it starts to be golden brown. Allow cookies to rest briefly before serving for optimal texture and flavor.
