2 cups flour
¾ teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon salt
1 cup brown sugar
½ cup granulated sugar
¾ cup vegetable oil
1 teaspoon vanilla
2 eggs
2½ cup grated zucchini

Directions:
Directions:
Preheat oven to 350º. Line with parchment or grease a large loaf pan. Whisk together first 4 ingredients in large mixing bowl. Whisk until blended sugars, oil, vanilla, and eggs. Grate zucchini using large side of grater. Mix grated zucchini into dry ingredients then add wet mixture, stirring just until blended. Pour into loaf pan and bake 50-60 minutes just until toothpick comes out clean.
