1 box chicken Rice-A-Roni or any boxed rice and pasta mix
1 cup carrots, thinly sliced
½ cup green pepper, chopped
½ cup onion, finely diced
1-10.5 ounce can cream of chicken soup
1 cup sour cream
2 cups cooked chicken breast, chopped
½ teaspoon black pepper
½ cup shredded sharp cheddar cheese

Preheat oven to 350º

Prepare a 9x13 baking dish by spraying it with cooking spray or giving it a little grease. Cook the boxed rice according to package instructions. During the last 5 minutes of cooking, add in the green pepper, carrots, and onion. Add the cream of chicken soup and sour cream. Stir to combine. Add the chicken breast and black pepper. Remove from heat. Pour contents into your prepared baking dish. Sprinkle cheese over top. Bake in preheated oven for 30 minutes and serve immediately.
