6 Ears of Fresh White Sweet Corn.

Boiled:
In a large pot add 6 qts water and enough corn husks (no silk) to keep the corn from coming into contact with the bottom of the pot. Heat until boiling, turn off heat and add corn. Let set for 8-10 minutes.

Milk variation:
Use 4 qts water, half gallon of milk and one stick of butter and heat until boiling. Then add corn for 8-10 minutes.

Grilled:
Leave corn in husks and soak in water for 15-30 minutes. Place the wet corn directly on the hot coals, turning every 5 minutes or so. Cook until the outer husks are charred completely black. Remove and remove husk right before eating.

Serve corn with butter and fresh squeezed lime (or lime wedges). I also like to use Don Sazon yellow poultry seasoning (found in the Mexican food section) instead of salt.

Miso Butter: 2 T white miso, ½ C sake, 1T lime juice, 1 t toasted sesame oil and fresh ground pepper. Mix together and add to a small aluminum pan. Place corn in the pan and put on the BBQ. Cover with foil and cook for 15 minutes, turning corn every 5 minutes or so. Top with thinly sliced scallions.
