This is for 1/2 recipe for dough
3 Cups Flour
3 tsp baking powder
1/2 tsp salt
8 oz of Crisco or 2 sticks of butter (cold cut in small pats)
2 eggs
1/2 cup milk
2 T sugar
Filling:
2 & 1/2 # italian sausage
3 # Ricotta (drained)
1/2 Cup grated cheese (Romano or Parm)
4-5 eggs

Directions:
Directions:
Make pie crust with flour, baking powder, 1/2 tsp salt, sugar, Crisco or butter, then add milk , mix well or use food processor, kitchen aid etc.
Sauté italian sausage either bulk or remove from casing then drain off. Mix drained ricotta with eggs & add the cooled Italian sausage-
Brush top of crust with egg yolks
Bake 350º 1 hour or till knife comes out clean.
