Directions:
Slice onions from stem to root most of the way to the center to create petals. Coat in oil. Sprinkle on garam masala. Bake at 350°F (180°C) fan. About every 10 to 15 minutes, flip the onions over. Keep cooking and rotating the onions until completely soft.

Cool. Blend all the pans contents into a smooth paste. Use about ½ cup per curry. Freeze in portions.

About 270 grams raw onions makes 95 grams (about ½ cup) paste
