Salad:
1 head of iceberg lettuce, chopped
1 head of romaine lettuce, chopped
24 basil leaves, chopped
3 cups mozzarella, grated or chunked
2 cups garbanzo beans
4 cups tomatoes, diced
4 T scallions, chopped
3 cups turkey or chicken breast, sliced
1/2 cup salami or pepperoni, sliced thin

Dressing:
2 tsp chopped garlic
1 T chopped scallion
3 T dijon mustard
2 teaspoons oregano
1 T chopped parsley
3/4 teaspoon black pepper
1/4 tsp kosher salt
1/2 cup red wine vinegar
2 cups olive oil
6 T Parmesan cheese
















Directions:
Directions:
Combine salad and dressing ingredients separately. Toss together before serving or serve side-by-side and allow guests to toss.
