3 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter
1 1/3 cup sugar
1 large egg and 1 large egg yolk
3 teaspoons pure vanilla extract

Topping:

1/3 cup sugar
1 teaspoon ground cinnamon

Directions:
Preheat oven to 375 degrees. Line two large cookie sheets with parchment paper.

Make the topping: Combine the sugar and cinnamon and set aside.

Make the cookies: In a large bowl whisk the flour, cream of tartar, baking soda, cinnamon and salt together.

In a Kitchen Aid or large bowl beat the butter and sugar together on high speed until smooth and creamy. Add the eggs, egg yolks and vanilla extract. Beat on medium speed until combined. Slowly add the dry ingredients. The dough will be thick.

Roll cookie dough into balls then roll them in the cinnamon-sugar topping. Arrange 3 inches apart on the baking sheets.

Bake cookies for about 10 minutes. Do not over cook. The cookies will be puffy and soft. When they are still warm, lightly press down on them with the back of a spoon to flatten them out.

Place cookies on a wire cooling rack.
