Notes: This casserole is a favorite of almost everyone! I have mainly started making it since my kids left home, but they have liked it when I'd bring it to their houses. I have taken it to church functions or meals to folks after surgery, after babies and for bridal showers etc., and all say it's great! It works very well to assemble, freeze, and thaw and bake later.
Very often I buy a rotisserie chicken to use in this . It works great. Of course you can also cook your own chicken and debone it for the recipe. One thing I have found is not to tear the tortilla pieces too small, as they can become too mushy. I usually cut them into 6 or 8 pieces, and that seems to work best.
This is good served with a green veggie, like green beans, a salad and a crusty bread!
