¼ cup butter
1 medium bell pepper( I omit this)
1 medium onion ( 1 cup)
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
*1 can (10 oz.) Rotel© Original Diced
Tomatoes and Green Chilies, undrained
2 cups chopped cooked chicken, breast ( dark meat is fine too, I usually mix both)
Cooking spray
12 corn tortillas, cut into about 6- 8 pieces
2 cups shredded cheddar cheese (2 cups)- or more

1. Preheat oven to 325ºF. Melt butter in large saucepan over medium heat. Add bell pepper(if using), and onions. Cook and stir bout 5 minutes or until tender.
2. Stir in both soups, tomatoes with liquid and chicken; blend well.
3. Spray 13 x 9" baking dish with cooking spray. Layer ⅓ of the tortillas, tomato mixture and cheese evenly in dish. Repeat layers twice more. Don't be afraid to use extra cheese if you like!
4. Bake uncovered, 40 minutes or until hot and bubbly.

This casserole is a favorite of almost everyone! I have mainly started making it since my kids left home, but they have liked it when I'd bring it to their houses. I have taken it to church functions or meals to folks after surgery, after babies and for bridal showers etc., and all say it's great! It works very well to assemble, freeze, and thaw and bake later.

Very often I buy a rotisserie chicken to use in this . It works great. Of course you can also cook your own chicken and debone it for the recipe. One thing I have found is not to tear the tortilla pieces too small, as they can become too mushy. I usually cut them into 6 or 8 pieces, and that seems to work best.

This is good served with a green veggie, like green beans, a salad and a crusty bread!
