-1 cup TVP (dried soya mince)
-1 cup stock (I used oxo vegan beef but use veg stock if unavailable)
-1 cups cooked brown rice
-bunch of parsley
-1 white onion
-1 garlic clove
-1 tsp chilli powder
-1 tsp smoked paprika
-1 tsp cumin/coriander powder each
-big pinch of salt + pepper
-1/4 (maybe 1/2) cup breadcrumbs
-1 tbsp soy sauce
-2 tbsp tomato paste

Directions:
-cook your brown rice according to packet instructions.
-mix your TVP and stock then leave to soak for 20 minutes, squeeze/drain the liquid from the TVP.
-once cooked mix the rice and soy mince along with the onion, garlic, dried spices, herbs and breadcrumbs, salt, pepper and soy sauce then combine/knead until rice starts to disappear but not completely so there is some texture.
-add breadcrumbs so they come together shape into kofta by squeezing with your hands then place on lined tray.
-fry or bake the kofta until browned and crispy.
-whack on a flat bread with lettuce, pickled veg and hummus/vg tzatziki.
