Ingredients: Chicken breasts, around 5-6 oz. each per serving Favorite marinade or seasoning( fajita works well) Favorite BBQ Sauce ( Granddaddy's or Sweet Baby Ray's) Applewood smoked bacon, cooked- at least one slice per piece of chicken Monterrey jack cheese Cheddar cheese Chopped tomatoes Chopped green onions

Directions:Marinate the chicken breasts, or season with your favorite grill seasoning. (I like fajita seasoning, or marinate an hour or so in lime juice, soy, sauce, garlic and a little olive oil, salt and pepper. ) Cook your bacon to have ready to assemble the chicken. Grill chicken outside or in a grill pan on the stove. When chicken is done. place in a casserole dish. Cover chicken with BBQ sauce, bacon and cheeses. Bake in a 350ºF. oven to heat through till sauce is slightly bubbly and cheeses are melted. Remove from oven. Top with chopped tomato and green onions before serving. |

Notes: This recipe is my "copy cat" version of the Monterrey Chicken at Chili's Restaurant. That was always my favorite item on their menu. My son in law, Jason was the one who first told me about it when we went there, so I tried it, especially since bacon was an ingredient! I loved it! I don't think it's even on the menu anymore, but they have made it when I asked. My version may not be exact, but it's close enough for me! It was served with mashed potatoes, cream gravy and steamed broccoli with large grates of carrots!
