½c margarine, softened
1c sugar
1c banana pulp
4T sour milk ( ¼c milk + tsp vinegar)
1 tsp baking soda
½ tsp baking powder
1½c flour
1 tsp vanilla

Directions:
Directions:
Combine margarine and sugar. In separate bowl, whisk dry ingredients. With a fork, add dry ingredients to margarine and sugar. With spoon, add pulp, milk and vanilla a little at a time, stirring well with each addition.

Grease and flour a bread pan.

1 hour @ 350º

Believe it or not, the more ripe the banana, the better the taste and the bread will be a nice dark brown. I let the banana skins get really black before putting the bananas in a zip lock bag and freezing them. When there are enough bananas ( usually 3 lg), thaw and mash in a bowl

Recipe is from best friend, Virginia Kontak and has been copied many times. Nothing beats this recipe for banana bread!
