1 lb ground pork
⅓ cilantro, chopped
1T hoison or oyster sauce
2t sugar
⅔c chopped chives
¾t sesame oil
2T soy sauce
2t fish sauce
2T rice wine vinegar
2t chopped ginger
Salt to taste
Dumpling wrappers

For sauce:
¼c soy sauce
¼c rice wine vinegar
¼c sugar

Directions:
Directions:
Mix together pork, hoison, sugar, salt, rice wine vinegar, soy & fish sauce. Then add cilantro, chives and ginger, mix. Put Dumpling in palm of hand. Add 1t ground pork mixture. Wet all four sides of Dumpling with finger dipped in water. Gather all sides up and pinch together to adhere making sure to get out any air. You may also fold into a triangle if desired. Boil water in a large pot. Once boiling, carefully drop dumplings into water and boil for 6 min until you can see the pork mixture through the wrapper. Don't over crowd.
For sauce: mix together soy sauce, rice wine vinegar and sugar. Whisk until sugar is dissolved. Serve sauce with dumplings
