4 tilapia filets (4 oz. each)
½ tsp. salt
¼ tsp. pepper
1 Tb. olive oil
¼ c. butter, cubed
¼ c. white wine or chicken broth
2 Tb. lemon juice
¼ c. sliced almonds

Directions:
Directions:
Sprinkle fillets with salt and pepper.

In a large nonstick skillet, roast almonds by stirring until they have a nice, nutty smell (about 3 minutes). Remove from pan. Add oil to pan and heat over medium heat.

Add fillets. Cook until fish just begins to flake easily with a fork (about 2-3 minutes on each side). Remove and keep warm.

Add butter, wine, and lemon juice to same pan. Cook and stir until butter is melted. Serve over fish. Sprinkle with roasted almonds.
