Instant Pot Pesto Chicken Pasta Recipe

2 Tbsp olive oil
3 boneless skinless chicken breasts, cubed
Salt and pepper, to taste
2 tsp Italian seasoning
2 tsp garlic powder
3˝ c low-sodium chicken broth
1 lb uncooked cavatappi or cellentani pasta
1 (8 oz) jar pesto sauce
˝ c shredded Parmesan cheese

Sprinkle salt, pepper, Italian seasoning, and garlic powder over cubed chicken. Heat olive oil, using sauté setting on Instant Pot (or you can use a skillet). Cook chicken 3-4 minutes per side, until browned. Remove from Instant Pot, if used for browning the chicken. Pour uncooked pasta into Instant Pot. Pour broth over top, making sure pasta is covered by liquid (as much as possible). Add chicken back into the pot, but don’t stir it into the pasta. Cover, place into locked position, and make sure the valve is in the ‘sealing’ position. Cook on high pressure for 5 minutes. The Instant Pot will take 15 minutes to come to pressure, and then will cook for 5 minutes. When timer goes off, turn off the Instant Pot and do a quick release. Remove lid and stir pasta mixture. If there is a lot of liquid in the bottom and some of the pasta looks uncooked, cover and seal again, and cook on high pressure for 2-3 more minutes. Repeat as above when the timer goes off. Stir in pesto until combined. Top with Parmesan. Enjoy!

I usually brown chicken cubes in a skillet, not the Instant Pot because I get the “burn” notice when I use it to sauté.
