4 chicken breasts
Swiss cheese slices
Ham slices
Bacon
Baby Spinach
1 cup Breadcrumbs

Sauce:

6 TBLS butter
½ cup dry white wine
1 tsp chicken bouillon granules
1 TBLS cornstarch
1 cup heavy whipping cream

It’s hard to say how much ham and Swiss cheese (depends on the size of the chicken breasts) I normally buy 1/2 pound of ham and 1/2 pound of Swiss cheese from the deli (cut thin sliced like for sandwiches)

I butterfly the chicken breasts and then pound the chicken to about 1/4”. I cover each breast with ham, Swiss cheese, and row fresh spinach in middle of the breasts.

Carefully roll the chicken breast (keeping ham and cheese inside) and secure with toothpicks I wrap 2 pieces of bacon around the breast securing the bacon with toothpicks. Bacon does not need to entirely cover the breast. I then dip each breast in an egg/milk wash, roll in breadcrumbs.

I sear the chicken in a pan with olive oil and then cook chicken in oven for about 30-35 minutes until instant read thermometer reads 165º.


While the chicken is cooking I make the sauce.

Mix cornstarch and 2 TBLS of water. Blend until smooth. Set aside.

In the same pan you seared the chicken melt butter over medium heat. Add wine and chicken bouillon granules. When bouillon is dissolved, stir in cornstarch/water and blend (no lumps). Stir in whipping cream and cook until the sauce thickens,

To assemble: slice chicken and put on a serving plate...spoon sauce over the chicken and serve.

This dish does take some work, but it really is good. Two large chicken breast will serve 4 people,
