  • 3 c. old-fashioned rolled oats (not quick cooking)

  • 1 c. all purpose flour

  • 2 tsp. ground cinnamon

  • ¼ tsp. salt

  • ¼ tsp. ground nutmeg

  • 1 tsp. baking soda

  • 1 c. (2 sticks) butter

  • 1 c. peanut butter (chunky or smooth)

  • 1 c. firmly packed brown sugar

  • 1 c. granulated sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1½ c. semisweet chocolate chips

  1. Preheat oven to 350ºF.

  2. Stir together: oats, flour, cinnamon, salt, nutmeg and baking soda in a large bowl.

  3. In a mixing bowl beat together: butter, peanut butter, and brown and white sugars at medium speed until light and fluffy, about 4 minutes.

  4. Add eggs, one at a time, beating for 1 minute after each addition.

  5. Beat in vanilla.

  6. Beat in oat mixture on lowest speed, just until blended. Stir in chocolate chips and/or raisins, by hand.

  7. Dough may be replaced in the refrigerator to increase workability, if desired.

  8. If using unchilled dough, drop onto ungreased baking sheet by tablespoon, about 2 inches apart, without rolling and do not flatten.

  9. If using chilled dough, scoop by rounded tablespoons, roll into balls between palms, and place on ungreased baking sheet, spacing 2 inches apart. Flatten to 1/2 inch thickness with palm of hand.

  10. Bake for 13 minutes or until golden and just firm around the edges.

  11. After baking and cooling, drizzle with melted dark & white chocolate, if desired.
