  • 4 eggs

  • ⅓ c. brown sugar

  • ½ c. honey

  • ½ c. dark corn syrup

  • 3 tbsp. melted butter

  • ½ tsp. salt

  • 1 tsp. vanilla extract

  • ½ lb. pecans (2 c.), broken

  • unbaked pie pastry in glass pie plate

  1. Preheat oven to 400ºF.

  2. In mixing bowl beat eggs until light.

  3. Beat in sugar until fluffy.

  4. Beat in, one at a time: honey, corn syrup, butter, salt, and vanilla.

  5. Add pecan pieces and stir.

  6. Pour mixture into unbaked pie pastry. (To prevent bubbles in the crust, prick the bottom of the pie crust several times with a fork before pouring in the mixture.)

  7. Bake for 10 min. at 400ºF.

  8. Reduce oven temperature to 350ºF, and bake an additional 40-45 minutes.

  9. Remove from oven and let cool before serving. (Extra delicious with a side of whipped cream.)

This recipe has been handed down through several generations. It came from Grandma Poskie's mother, Grandma Moritz, who lived in Rhinelander, WI. It is a generational Thanksgiving and Christmas staple.
