Preheat oven to 325º

For Crust:
1 cup graham cracker crumbs
2 Tbsp sugar
4 Tbsp unsalted butter, melted

Mix the graham cracker crumbs, sugar & melted butter until crumbs are evenly coated. Place 1 Tbsp of mixture into bottom of each cupcake liner and compact it well.

Cheesecake filling:
16oz cream cheese, softened
½ cup granulated sugar
2 large eggs
½ cup sour cream
½ cup heavy cream
1 vanilla bean split and seeds scraped
1 tsp vanilla extract

Beat cream cheese and sugar together until smooth & creamy. Add eggs, one at a time. Add sour cream & heavy cream next. Add vanilla next to add layers of flavor.
Pour filling into graham cracker crust. Place in oven; bake 20-25 min. let cool to room temp, then refrigerate at least 2 hours.

Topping:
¼ cup granulated sugar

Just before serving sprinkle sugar on top of each cupcake and use a kitchen torch to carmelize it. Once the sugar has hardened they are ready to serve.
