12 slices Bacon, cut into 1" pieces
1 C fresh Mushrooms, sliced
5 Green Onions, chopped
1 Tomato, chopped
12 Eggs
1/3 C Sour Cream
1 C shredded Cheddar Cheese
1 C shredded Mozzarella Cheese

Directions:
Directions:
Heat oven to 350ºF.
Cook bacon until crisp. Drain on paper towels.
Discard all but 1 T Drippings from skillet.
Add mushrooms to skillet and cook 2 minutes. Remove from heat.
Add onions, bacon and tomatoes to the mushrooms. Mix well.
Whisk eggs and sour cream, pour into 9"x13" greased baking dish.
Top with bacon mixture. Sprinkle cheeses on top.
Bake 30 minutes. Let stand 5 minutes before cutting.
