1 lb. mild Italian sausage meat
1 tbs. olive oil
3 cloves garlic, minced
1 small onion, finely diced
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. crushed red pepper flakes
1 bay leaf
1 lb. baby red potatoes (sliced or diced)
3 c. spinach (or Kale) roughly chopped
1/4 c. heavy cream
4 c. chicken broth
salt and pepper, to taste

Directions:
Directions:
Heat olive oil in a deep fry pan or large sauce pan. Add Italian sausage meat and cook until browned, breaking up as it cooks, into small pieces, takes about 3 - 5 minutes. Add in the diced onion, garlic, basil, oregano, red pepper flakes and cook until the onion is softened, about 2-3 minutes. Season with salt and pepper. Add the chicken broth and bay leaf and heat. Add the potatoes and cook until they are tender, about 10 minutes. Add the chopped spinach or kale and cook until it wilts, then stir in the heavy cream (sour cream also works) and mix well. Add more salt and pepper if required. Serve immediately with a warm biscuit, breadsticks or bun for dipping in the broth, so good!
