6-8 thin sliced chicken breasts
8 slices of prosciutto- or deli ham
2 Tbls dijon mustard
salt and pepper
1 bunch asparagus - woody ends trimmed
1/4 cup arrowroot starch
1/4 cup plus 1 Tbls virgin olive oil
2 garlic cloves
1/2 cup chicken broth
1/4 cup white wine
2 Tbls fresh lemon juice- 1 lemon

Directions:

on a clean cutting board layer pre heat oven to 400
1.lay prosciutto/ or ham
2.chicken breast
3.spread dab of mustard on each breast
4. put 3 asparagus
Then roll up into bundles and secure with tooth picks
Pour the arrowroot into a large dish and roll bundles in arrowroot
In large oven safe skillet over med heat 1/4 cup olive oil
place bundles in oil and fry until golden brown ( may have to do 2 batches)

Transfer to clean plate
add garlic to skillet for 1 min
add chicken broth wine and lemon juice simmer for 5 min
Nestle bundles in broth and put in oven uncovered until chicken is cooked through and asparagus is tender --about 15 min
To serve take out tooth picks and spoon the pan sauce over each bundle
