16 oz. bacon
1 onion (diced)
1 bell pepper (diced)
4 cups hash browns (approximately)
8 eggs
1 ¼ cup milk
1 teaspoon sat (to taste)
½ teaspoon black pepper (to taste)
3 cups shredded cheddar cheese (divided)

Directions:
Directions:
1. Preheat the oven to 375º degrees F if you're baking right away. And grease a 9x13 baking pan.

2. Cook bacon in a large saute pan. Set bacon aside and drain out the grease.

3. Add onion and bell pepper to the pan and cook for about 5 minutes, until they are soft, and the onion is translucent.

4. Stir together your eggs, milk, salt, and pepper in a medium sized bowl. Set it aside.

5. In another bowl, stir together your bacon, onion, bell pepper, hash browns, and 2 ½ cups of cheese.

6. Scoop the hash brown mixture into the prepared pan.

7. Pour the egg mixture over everything.

8. Sprinkle the remaining cheese over the hash browns.

9. Cover with aluminum foil.

10. Bake in the preheated oven for 45 to 55 minutes or until the center is cooked through (and knife can be inserted and comes out clean).

11. Let it cook for about 5 to 10 minutes before slicing and serving.

12. Top with fresh chives or parsley when serving, if desired.
