2 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons granulated sugar
½ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1 ½ cups eggnog
2 eggs
2 tablespoons butter (melted)
1 teaspoon vanilla extract

Directions:

1. Preheat the griddle to medium high heat.

2. Add the flour, baking powder, sugar, salt, cinnamon, and nutmeg to a large bowl and whisk them together.

3. In another bowl stir your eggnog, eggs, melted butter, and vanilla together.

4. Add the wet ingredients into the dry ingredients and stir them together until just mixed, you will still have some small lumps.

5. Grease your griddle with nonstick spray or butter.

6. Pour the batter onto the skillet in ¼ cup fulls

7. Cook the pancakes until the tops start to bubble and you can see the bottoms are golden brown, then flip them over.

8. Cook bottom side of pancakes an additional 1 to 2 minutes until both sides are golden brown and pancakes are cooked through.
