1 tablespoon + 1 cup butter (softened, divided) 1 1/2 cups coarsely chopped pecans (toasted) 1 cup semisweet chocolate chips 2 cups packed brown sugar 1 cup light corn syrup 1/4 cup water 1 can (14 ounces) sweetened condensed milk 2 teaspoons vanilla extract

Directions:1. Line a 13x9-inch pan with foil and butter the foil with 1 tablespoon of butter
2. Sprinkle the toasted pecans and chocolate chips evenly over the prepared pan
3. In a heavy saucepan, melt the remaining 1 cup of butter over medium heat. Add the brown sugar, corn syrup, and water. Cook, stirring constantly, until the mixture comes to a boil
4. Stir in the sweetened condensed milk. Cook, stirring constantly, until the mixture reaches 248°F (firm-ball stage) on a candy thermometer
5. Remove the saucepan from the heat and stir in the vanilla extract
6. Pour the caramel mixture into the prepared pan over the pecans and chocolate chips. Do not scrape the saucepan
7. Let the mixture cool completely before cutting into bars |

*To toast pecans, bake them in a 350°F oven for 5-7 minutes, or until fragrant and lightly browned
*If you don't have a candy thermometer, test the caramel by dropping a small amount of the mixture into cold water. If it forms a firm ball that doesn't flatten when removed from the water, it's ready
*To ensure clean cuts, refrigerate the cooled bars for about 30 minutes before cutting
