2 Chicken breasts, chopped

1 Onion, diced

1 Red pepper, thinly sliced

2 Garlic cloves, crushed

75g Chorizo, sliced

1 tbsp Cajun seasoning

250g Long grain rice

400g tin plum tomatoes

350mls Chicken stock

Method

Heat some oil in a large pan with a lid

Fry off Chicken breasts until golden, remove and set aside

Fry off the onions until soft

Add in the peppers, garlic, chorizo and the Cajun seasoning. Cook for around 3-5 minutes.

Stir the chicken back into the pan along with the long grain rice, add in the tomatoes and the chicken stock.

Cover and simmer for 20-25 minutes until the rice is tender.
