16 oz sliced zucchini
1 oz mayo
1/2 oz Crispy jalapeños
1 1/2 oz Cojita cheese pm grated or crumbled
8 oz corn kernels
1 tsp Cajun seasoning
1,5 TBSP butter
13 oz boneless skinless chicken breast

Directions:
Directions:
Preheat oven to 425º

Combine corn, sliced zucchini and Cajun seasoning and place on one side of 9x13 baking dish. Top with butter.

Pat chicken dry, and place on empty side of pan. Top with salt, mayonnaise, crispy jalapeños and cheese

Bake uncovered until chicken reaches 165º, about 20-25 minutes.

Ley rest for 5 minutes before serving.

Crispy jalapeños are similar to crispy onions and can generally be found in the same area of the grocery store.

I use frozen seasoned mexican corn and I flatten the chicken out a bit so it cooks quickly all the way through
