2 tbsp oil

2 onions chopped

500g Lamb mince

Thumb size pieces of ginger peeled and grated

3 garlic cloves crushed

1/2 tsp ground cinnamon

1 tsp turmeric

2 tbsp medium curry powder

1 tbsp tomato puree

1 lamb stock cubes or beef if not available

Pinch of sugar

4 large sweet potatoes

50g mature cheddar grated

250g frozen peas

2 poppadoms...optional

1 green chilli sliced

Heat oil in a large pan and fry the onions until soft approx 8 minutes

Add the Lamb and stir until brown

Add in the ginger, spices, garlic and tomato puree stir through for a couple of minutes

Add in 600mls of water, crumble in the sock cube and the sugar and bring to a simmer. Lower the heat and cook for 45 minutes stirring occasionally.

Boil the sweet potatoes then leave to steam dry for 10 minutes

Mash the potatoes with the cheese and seasoning

Tip the mince into a baking dish, stir in the peas and cover over with the mash

If using the poppadoms crush over the mask lid then drizzle over a little oil

Bake in the oven 160 fan for 45 mins
