1 medium Eggplant
5 tbsp. Butter, divided
3 tbsp. Flour
1 - 15 oz. can Diced Tomatoes
1 small Green Pepper, chopped
1 small Onion, chopped
1 tbsp. Brown Sugar
Salt and Pepper
Breadcrumbs
Grated Cheese, preferably Parmesan

Directions:
Directions:
Peel, cut up and boil eggplant in salted water about 10 minutes. Drain and set aside. Stir in 3 tbsp. melted butter and flour into it. Cook tomatoes, green pepper, onion, and sugar with salt and pepper to taste, about 5 minutes. Add to eggplant mixture. Mix well and put in buttered baking dish. Top with breadcrumbs and dot with butter and cheese. Bake at 350º for about 40 minutes.
