5 to 6 medium sweet potatoes
1/2 teaspoon of salt
1/2 cup of unsalted butter
2 tablespoons of water
1/4 cup of pure maple syrup
One cup of packed the light or dark brown sugar
Three-quarter teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 teaspoon pure vanilla extract

Peel then slice the sweet potatoes into 1/2 inch thick slices. Place in a greased 9 x 13“ baking dish. Sprinkle salt on top and tossed to coat.
Preheat oven to 375°F.
Make the sauce; cut stick of butter in half. Combine all the butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger into a medium sauce pan or a medium heat. Cook and stir until the butter has melted. Stop stirring and bring to a gentle boil. Boil for two minutes without stirring. Remove sauce from heat and stirring the vanilla extract.
Pour sauce over potatoes and tossed a coat
Bake for one hour stopping and stirring the sweet potatoes every 20 minutes. After the first 20 minutes, cover the dish with aluminum foil to the potatoes bake evenly.
Remove from the oven sprinkle with rosemary and sea salt diffusing then cool uncovered for 10 minutes before serving. The sauce is thin right out of the oven, but it thickens as it cools.
Cover and store leftovers in the refrigerator for up to one week. So also be thick after refrigeration but then out as you warm the leftovers up.
Note; I make this for Thanksgiving every year and everybody just loves it. They lay over it. It’s totally made in the oven not in the skillet so it’s much easier to make than Arlene‘s recipe.
