1/2 c Olive Oil
1/4 c White Wine (such as Pinot Grigio)
3TBSP lemon juice divided
1 tsp lemon zest
4 cloves garlic finely minced
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
2 tsp kosher salt, divided
1 tsp black pepper
2 lbs boneless skinless chicken thighs, cut in 1/2 inch cubes
2/3 cup Italian bread crumbs
2/3 cup panko
1/2 c grated Parmesan cheese
1/2 tsp garlic powder
salt and pepper
6 skewers (6-8 inches long)
olive oil cooking spray
4 TBSP butter
2 TBSP finely chopped parsley

Directions:
Directions:
Whisk together olive oil, wine, 2TBSP lemon juice, lemon zest, 1/2 of the garlic, red pepper flakes, oregano, 1 tsp salt and 1/2 tsp black pepper.

Add chicken to marinade to coat. Cover and refrigerate 30 minutes to an hour.

Stir together remaining salt and pepper, bread crumbs, panko, parmesan cheese and garlic powder.

Remove chicken from marinade. Toss in crumb mixture, pressing to adhere.

Presoak skewers - thread chicken onto skewers - coat with cooking spray.

Preheat air fryer to 390º. Cook about 12 minutes flipping half way through. Internal temp should be 165º.

Melt butter with remaining garlic in microwave. Stir in remaining lemon juice and parsley. Drizzle over chicken just prior to serving.
