3 Sweet Potatoes
2-3 T Olive Oil
4 T Curry
Salt to taste
1 c mayonnaise
Directions:
Directions:
Cut sweet potatoes into long chunks with skin attached. Toss in olive oil and 1 T curry and sprinkle salt to taste.

Bake at 425 degrees for 25 minutes.

While the sweet potatoes are cooking, mix a cup of mayo with 2-3 T of curry seasoning. The sauce will be golden yellow. Mix well and place in refrigerator. This sauce can be made up to a day before and the longer it sits the better it tastes.
