1 chicken thigh, bone in
1/2 onion, diced
1/4 red pepper, diced
1/4 cup arborio rice
1/2 cup water
1/8 tumeric
1/2 chicken stock cube

Directions:
Directions:
Preheat oven to gas mark 5.
Season the chicken with salt and pepper.
Fry the chicken skin side down over medium heat for 5 minutes.
Turn the chicken and add the onion and pepper and fry until the onion has softened.
Add in the rice, water, tumeric and chicken stock cube.
Mix everything together and add to an oven dish.
Bake for 30 minutes or until the chicken is cooked.
