1 medium potato, peeled
1/2 C potato water
1 pkg yeast
1 cup(s) milk
5 cup(s) bread flour
1/4 cup(s) shortening
1/2 cup(s) sugar
2 eggs
2 tsp salt
1/4 cup(s) butter

Directions:
Directions:
Boil potato until soft. Use 1/2 cup potato water (lukewarm) and stir yeast into the water. Scald milk and allow to cool to lukewarm. Add yeast along with 1 1/2 cups flour and mashed potato. Beat hard for 3 minutes. Cover and let rise 1 1/2 hours.

Cream shortening and add sugar, eggs, salt. Stir into yeast mixture. Add rest of flour to make a soft dough. Put into a greased bowl and allow to rise again. Turn out on floured board and punch down. Place dough in a greased 2 quart casserole dish and brush top with butter. Allow to rise again and bake.

BAKE at 350 degrees for about 50 minutes. When cool, slice into thin slices and enjoy plain or with butter, jam, etc.

This bread tastes like a pound cake. It takes a little time but is worth the effort if you want a bread that melts in your mouth. It requires no kneading but does require two rising. The recipe was in an old Beth Tartan cookbook in the 70's.
