2 large ham hocks or ham pieces
2 lbs collard greens, cleaned, stems removed and leaves roughly chopped
4 cups chicken broth
1 large onion, chopped
4 cloves garlic, minced
1 TBSP apple cider vinegar
1 tsp crushed red pepper flakes (optional)
1 tsp smoked paprika
1 tsp sugar (optional, to balance bitterness)
Salt and black pepper, to taste
1 TBSP olive oil (optional, for additional richness)

Directions:

1. Prepare the Crock Pot.

2. Place the ham in the bottom of your slow cooker.

3. Add the chopped onion and minced garlic around the ham hocks.

4. Add the collard greens: layer the chopped collard greens on top of the ham hocks. Depending on the size
of your slow cooker, you may need to add the greens in batches (while it's cooking), allowing them to wilt
slightly before adding more.

5. Add liquid and seasonings.

6. Pour the chicken broth and apple cider vinegar over the greens.

7. Add the crushed red pepper flakes, smoked paprika, and sugar (if using).

8. Season with salt and black pepper.

9. Drizzle olive oil over the top for added richness (optional).

10. Remove the ham from the crock pot and shred the meat, return the meat to the greens, stir, and adjust seasoning if needed.

11. Serve hot and enjoy!

Slow cooker: cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours, until the ham is tender and the collard greens are soft and flavorful.
