Ingredients: 10 oz self-raising flour Pinch of salt 5 oz sugar 1 egg and 1 egg yolk 3 tablespoons of oil or melted margarine
For the filling: 2 cooking apples 1 oz sugar 6 tbsp apricot jam 6 oz raisins 2 oz desiccated coconut 4 oz chopped nuts ¼ tsp mixed spice ½ tsp cinnammon
For the topping : 1 egg white A little sugar and spice mixed

Directions:Make a dough by sieving flour and salt and then adding beaten egg and egg yolk, plus ⅔ of the oil. Mix thoroughly and add enough water to give a firm rolling consistency. Knead lightly until smooth.
Grease dish with remaining oil. Roll out half of dough to fit bottom and sides of the dish. Roll the remaining dough and cut into 3 pieces the same size as the dish.
Slice apples thinly and mix with other filling ingredients. Place a third in the dish then cover with a piece of dough. Put in a second layer of filling and cover with a second piece of dough. Add the rest of filling and cover with dough.
Brush with egg white, sprinkle with sugar and spice and then bake till golden.
Bake in centre of oven at at 325-350 ºF / 170-180 ºC for approx. 1 hour 20 minutes. |

Notes: This recipe came from one of my early purchases of a cookbook in 1973 and was from a collection of international recipies by Marguerite Patten. It makes a great winter dessert and can be served with cream, custard or even ice cream!
