For the Fritters:
2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large eggs
1/2 cup whole milk
2 teaspoons vanilla extract
2 tablespoons unsalted butter, melted
1 1/2 cups diced apples (preferably Granny Smith or Honeycrisp)

For the Glaze:
1 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract

1.Prepare the Oven and Baking Sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
2.Mix the Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
3.Combine the Wet Ingredients: In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter until smooth.
4.Make the Batter:
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced apples.
5.Shape and Bake:
Scoop heaping spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 14–16 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
6.Make the Glaze:
While the fritters cool slightly, whisk together the powdered sugar, milk, and vanilla extract until smooth.
7.Glaze and Serve:
Drizzle or brush the glaze over the warm fritters. Allow the glaze to set for a few minutes before serving.
