2 lbs. chicken drumsticks, or breasts
1 red onion, chopped
3 cups red potatoes quartered
1 cup baby carrots
3 stalks celery, chopped
1 cup chicken broth
2 T. thyme, divided
1 package dry Italian salad dressing mix
1 tsp. cinnamon
1/2 tsp. chili powder
2 T. brown sugar
2 T. soy sauce
2 T. canola oil

Directions:
Directions:
Preheat oven to 350 degrees. Stir together Italian dressing mix, cinnamon,1 T. thyme, chili powder and brown sugar in a big mixing bowl. Add soy sauce and canola oil, stir until combined well, set aside. Spread onion, potatoes, carrots and celery at the bottom of a 9x13 pan. Pour chicken broth over vegetables and sprinkle remaining thyme on top. Rinse the skin on chicken drumsticks and pat dry. Place them in the marinade, turning with tongs to make sure they are well coated. Lay chicken pieces on top of veggies. Scrape any remaining marinade into pan. Bake for 60 minutes, turning halfway through.
