NOODLE SALAD
8 ounces noodles, such as udon noodles
1 medium green or red bell pepper, thinly sliced
1 large carrot, thinly grated,
⅓ cup red cabbage slices,
1 cup snow peas
1 cup thinly sliced onions

Directions:
Directions:
1.Boil udon noodles according to to package directions until tender.
2. While noodles are boiling, in a medium frying pan add 2 tablespoons of olive oil to pan. Add all the veggies and sauté for 3-4 mins. Turn off heat when veggies are tender.
3.When the udon noddls are done toss them with the veggies.
4. Use Thai Peanut Sauce on noodles ( see miscellaneous)
