5 lbs Russett potatoes, peeled and cut into cubes (I leave some of the skin on)
1 1/2 t salt 6 minced garlic cloves

1 1/2 t salt
4 oz cream cheese
3/4 cup half and half
1/2 t chili powder
1/2 t cayenne pepper
8 oz pepper jack cheese, divided
Scallions

Directions:
Directions:
Preheat oven to 375º

Put diced potatoes, salt and garlic in large pan with room temperature water. Bring to a boil and boil for 20 minutes or until potatoes are tender. Drain thoroughly, put back in hot pan.

Add rest of ingredients, except 4 ounces of the cheese and scallions. Mash or mix with beater. Add more seasonings to taste.

Put in casserole dish and top with remaining cheese and more chili powder. Bake 30 minutes. Sprinkle with scallions.
